This is Jobs making fun of Gil Amelio, the Apple CEO who bought NeXT and brought Jobs back as a consultant. Jobs thought Amelio was clueless and likely played a large role in Apple booting Amelio and bringing Jobs back as CEO. He used this supposed Amelio quote as a an example.

"Apple is like a ship with a hole in the bottom, leaking water, and my job is to get the ship pointed in the right direction."

It’s not a Amelio quote, it’s an original Steve jobs joke about how the CEO needs to focus on the strategy and direction of the company.

At the end of the day if you are in a ship leaking water, the priority is getting to land. Bailing it out buys you more time but if you aren’t heading to land you’ll sink either way. Its not the captain of the ship job to bail out the boat, there are other people who are responsible for that, it’s the captains job to get the ship to its destination.
